Flaky pastry or pie dough (or Pillsbury rolls)
¼ # finely chopped bacon
½ c finely chopped onion
Small bunch cilantro, chopped
Salt, pepper, cayenne pepper
Cook bacon in frying pan, adding onion once fat starts to release, until bacon is crispy, seasoning per taste.
Remove from pan and place on paper-towel-covered plate. Roll out dough to 4 inch diameter or square pieces. Place a spoonful of bacon mixture plus tsp or so of cilantro in middle of each dough piece, fold dough in half and crimp the edges.
Bake in oven at 400° for 15 minutes or til golden brown.
Can be made ahead – store between wax paper sheets to avoid sticking, making ahead also seems to enhance the flavor.
