I’ve been making this breakfast for my family for years, and it’s still a favorite.
2 T vegetable oil
2 eggs
1 cup milk
1/2 cup flour
1/2 cup oatmeal
- Place 1 T of oil in 9 inch glass baking dish. Turn oven to 425 F and place dish in it to heat.
- Place eggs in milk & hand blend; continue blending while adding milk and remaining 1 T oil (or you can put it all in together and use an immersion blender).
- Gradually add flour and oatmeal, mixing until combined.
- Remove hot baking dish from oven. Pour in batter. Return to oven and bake 25 to 30 minutes or until golden brown.
- Serve with maple syrup & butter, or fruited yogurt, or…
