Breakfast Cookies

These are delish, even my husband likes them. Great for on the road. This recipe is from Sweet Cindy.

1 cup butter                             1 cup dried Cranberries

2 cups coconut sugar               1 cup dried Apricots (chopped)

2 eggs                                      1 cup Golden Raisins

1 tsp. Baking soda                  1 cup nuts (I use pecans)

2 tsp. Cinnamon

1 tsp. Salt

1 cup oatmeal

1/2 cup flax meal (I just grind flax seed)

2 cups flour

Preheat oven to 350

Mix butter and sugar together. Mix in eggs. Mix in soda, salt and cinnamon. Mix in flour then oatmeal. Add in fruit and nuts. This will be very thick and may be hard to mix. I use a very sturdy spoon or my hands.

I use parchment paper on the cookie sheets.Bake 10-13 mins. Don’t over bake.
