Prepare one box of Near East “Taboule” mix according to package instructions. Refrigerate 30 minutes, then add 2-3 tablespoons of olive oil, one cucumber (peeled, seeded) and one tomato, both cut into tiny pieces. Add a half cup chopped parsley, the juice of half a lemon, and one package of crumbled Feta Cheese with Mediterranean Seasoning. Mix well, let refrigerate overnight.
